I like that scene a lot. In my little booklet it says that Joe Dante gave the actors a lot of freedom to improvise. I always believed that in that scene Hanks and Fisher simply acted without script.

Its also funny how part of Rays arguement is "the house will be spotless when you get back" Sounds like he is trying to convince her to go without him.
