speaking of bbq..what are your summertime grill recipes?

I like to cut up smoked sausage one jalapeno a small vidalia onion and a yellow banana pepper....pour in some sweet and sour sauce and just a few shakes of Tabasco sauce and wrap it in foil.....put it on the grill that's not too hot...mmm tasty goodness

My favorite thing to grill in the summer is Steak Tips. I'm sure nobody here has ever heard of this dish because it's a New England (mostly in Massachusettes) dish. Here's the skinny:

Use about 1-2 lbs of Flap Meat (from the short loin near the flank)

mix together in a bowl:
1/3 cup soy sauce
3 tbs vegitable oil
3 tbs toasted sesame oil
3 medium galic cloves (minced or press through a garlic press)
1 tbs minced fresh ginger
2 tbs dark brown sugar
2 tsp grated orange zest
1/2 tsp red pepper flakes
1 medium scallion sliced thin.

put the meat in a ziplock bag along with the mixed ingrediants (pressing out as much air as possible) and put in the fridge for at least 1 hour (fliping over 1/2 way through). The longer you marinade the better the taste.

Now, I use a gas grill so this is how I cook them:
Turn all burners on mediam high and let the grill get very hot.
Now turn the other burners to low leave on on medium high. Cook the steak tips over the hot part of the grill for 4 minutes then flip over and cook another 4 minutes. Remove them from the grill and let the steak tips rest about 5-10 minutes.

Enjoy with your favorite veggie.
I cooks this year round but mostly in the summer. Yummy!
